Since working from home, I have had the chance to create a scrumptious and convenient lunch utilizing fresh, seasonal produce. Recently, I whipped up a delightful and effortless dish of seared tuna and vegetables. The combination was both easy to prepare and remarkably tasty.

Ingredients:

  • 2 tuna steaks (about 1 inch thick)
  • 2 tablespoons vegetable oil
  • Salt and black pepper
  • 2 cups of mixed vegetables (such as bell peppers, carrots, onions, broccoli)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1/4 cup chicken or vegetable broth
  • Cooked rice, for serving

Instructions:

  1. Start by heating a large skillet over medium-high heat. Add the vegetable oil and let it heat up.

  2. Season the tuna steaks generously with salt and black pepper.

  3. When the skillet is hot, add the tuna steaks and cook for about 2-3 minutes on each side until they are nicely seared on the outside but still pink in the center. Transfer the tuna steaks to a plate and cover them with foil to keep them warm.

  4. In the same skillet, add the mixed vegetables and stir-fry for about 3-4 minutes until they are crisp-tender.

  5. In a small bowl, whisk together the soy sauce, honey, sesame oil, cornstarch, garlic, ginger, and broth until smooth.

  6. Pour the sauce over the vegetables and stir until the sauce thickens and coats the vegetables. Remove from heat.

  7. Serve the seared tuna steaks with the stir-fried vegetables and some cooked rice on the side. Drizzle any remaining sauce over the tuna steaks.
